You're all set with a delicious Mankai and zucchini Shakshuka family recipe, because there's nothing like a collective feast centered on a steaming pan filled with green goodness. 

 

Here's what you need:

  • 1 scoop (5g) Mankai powder

  • 1 thinly diced onion

  • 1 zucchini, cut in half and sliced into cubes 

  • ½ package of spinach, thinly cut and without the stems

  • 2 cloves of garlic, cut into slices

  • 50 ml of cooking cream (9%)

  • Leaves from 2 za'atar stems / fresh oregano

  • 4 eggs

  • 2 spoons of olive oil

  • 2 spoons of parmesan cheese

  • A pinch of nutmeg

  • Salt

  • Pepper 


Let's get started:

  1. Heat olive oil in a pan, add the onion and fry until golden.

  2. Add the zucchini and fry until soft.

  3. Add the garlic and oregano. Fry for 1 minute.

  4. Add the spinach and cook until it decreases in volume.

  5. Add the cream, season with salt, pepper and nutmeg. Stir and cook for 5 minutes.

  6. Add the Mankai and stir until dispersion is even.

  7. Break the eggs into the pan, sprinkle the grated parmesan cheese, cover and cook until you achieve your preferred egg texture.

  8. Serve and enjoy!
